Went to Ceremony for the first time last week and was amazed at the number of people who paid cover and nursed beers just so they could shout over music at one another.       Why didn't they just go to someone's house, buy cheaper drinks and play music they liked?

If it's chill music in a loungy atmosphere you'll probably attract more than one person who likes working in that atmosphere.  I hate working in cafes, but would much rather work in a lounge with table service than at my house.   Also, it's FREE.  I'm quickly learning that here in Pittsburgh, that a FREE THING exists is more important than if someone actually uses whatever the FREE THING is.
